
Reader’s Choice Ox-bone soup at Han Bat Sul lung tang, or ox-bone soup, is a great bowl of soothing, protein-rich goodness with origins in centuries-old harvest rites, after which the bones of a sacrificial beast of burden were boiled for hours to make a milky white broth. Bland, silky, and luxuriant with dissolved marrow, it’s a specialty of the region surrounding Seoul and, in these times, much valued as a remedy for the previous night’s debauchery. Sul lung tang is pretty much the only thing they do here at Han Bat, where it comes with a choice of chap chae or white noodles and a variety of cow parts, accompanied by hot roasted-corn tea and the refreshing, crisp, spicy contrast of kkakdugi (diced radish) and whole cabbage kimchi.
